It is the center of corn. Haven't you ever had grits? Grits are cracked hominy.

You can buy a white and a yellow hominy. It in by gone days was field corn that was soaked in lye to tenderize it, mostly by farmers who ate much of what they grew.
Today it is as simple as finding the cans in the grocery store, 89 cents per. Yes they also used to grind it to make grits, that today also is as easy as finding where they stock the grits in the store. A lot of a different taste between hominy and homniy grits too today.
