Granny Cake

1 1/2 c sugar
2 c flour
1/2 tsp salt (omit if using self-rising flour)
1 tsp baking soda (omit if using self-rising flour)
2 eggs
1 lg (20 oz.) can crushed pineapple in its own juice (including juice)
... 1 c brown sugar
1 c chopped pecans

1 c evaporated milk
1/2 c sugar
1 stick margarine
1 tsp vanilla

Mix the sugar, flour, salt, soda, eggs and pineapple together and pour into a 9 x 13 pan. Sprinkle the top with one cup brown sugar and one cup chopped pecans. Bake at 350 degrees for 45 minutes.

Cook the milk, sugar, margarine and vanilla until mixture comes to a rolling boil.

AFTER THE CAKE HAS BAKED AND RIGHT OUT OF THE OVEN, pour the cooked milk mixture over the entire cake. This is so moist and delicious!!!

Should be kept refrigerated.

easy chocolate party cake

2 cups all-purpose flour
1.5 cups whole milk
.667cups graunlated sugar
.667 cupd dark brown sugar
.5 cups unsweetened cocoa
.75 cups butter
3 large eggs
2 teaspoons vanilla extract
1 teaspoons banking powder
1 teaspoons banking soda
.5 teaspoons salt
fudgy cream cheese frosting(see link below


make the batter : preheat oven 350 degees F. using a small brush. lightly coat two 8 ich cake pans with softend butter. dust with flour and tap
excess. set aside. in a large bowl , using the mixer seat it at low speed , combine the flour remaining 10 ingredients . increase mixer speed to
meduim and contiune to beat for 3 more minutes.

bake the cake : divide the batter equally between the pans and spread evenly. bake on the middle rack of the oven until the tops springs back lighty touched . cool in cake pans on rack for 10 minutes using a knife, loosen the cake layers from the pan sides. invert cake layers onto the wire rack to cool completey

frost the cake: use a serrated knife to level the tops of the cake layers, if necessary . line the edge of a cake plate with 3-inch-wide stips of waxed or parchment paper and place a cake layer, trimmed side down in top. place 1/2 cup of our fudgy cream cheese frosting on top of the layer and spread evenly. place the second layer on the first and cover the top sids with the remaining icing.remove paper stips and server. store in refigerated for up to 4 days
