Mrs. Jim's Squash Relish

6 large yellow squash
2 large onions
2 large bell peppers
1 jar pimento

Chop squash, onions, and peppers. Cover with 1/2 cup salt and ice cubes for one hour. Drain well. Add pimento, 2 cups vinegar, 3 cups sugar, 2 tsp celery seed, 2 tsp tumeric.

Add all together and boil 3 to 5 minutes. Put in jars and seal.

Took some to Cynthiana and betty wanted the recipe. We will probably make some tomorrow. We sell quite a bit at the Farmers market. Use like chow chow on beans, hot dogs, hamburgers. One FM customer puts it on fish. You can save your squash for a few days and make a bigger batch. That's what we do. We are beginning to have squash left over from the market.

Thanks Jim for the recipe . Yes it is realy tasty and will be making some . Can hardly wait to try some on little white navy beans they are my favorite. It is special good on hotdogs.

It ain't too late to plant squash Derick. We are still plantin' some. ;)
