6 large yellow squash
2 large onions
2 large bell peppers
1 jar pimento

Chop squash, onions, and peppers. Cover with 1/2 cup salt and ice cubes for one hour. Drain well. Add pimento, 2 cups vinegar, 3 cups sugar, 2 tsp celery seed, 2 tsp tumeric.

Add all together and boil 3 to 5 minutes. Put in jars and seal.

Took some to Cynthiana and betty wanted the recipe. We will probably make some tomorrow. We sell quite a bit at the Farmers market. Use like chow chow on beans, hot dogs, hamburgers. One FM customer puts it on fish. You can save your squash for a few days and make a bigger batch. That's what we do. We are beginning to have squash left over from the market.

It ain't too late to plant squash Derick. We are still plantin' some. ;)
