Spicy Tomato Preserves

This is the rec but we usually triple it and that makes about 8pts

3cps tomatoes pealed and chopped
1/4 cp lemon juice
41/2 cps sugar
1 bx sure jell (we use clear jel )
11/2 tsp grated lemon rind
1/2 tsp cinnamon
1/2 tsp allspice
1/4 tsp ground cloves
1/4 tsp ginger

Simmer tomatoes about 10 minutes
Add lemon juice and rind and spices
Now add the sure-jell
Bring to a full boil over high heat
All at once stir in sugar Stiring and maintaining high boil
once mixture is completely dissolved boil for about another minute
Remove from heat and skim off any foam
Ladel into hot sterile jars and seal.

Note we usually turn ours upside down to help with sealing

Sound good Mike .Eat some on a biscuit for me in the moring .
You did use yellow tomato, didn't you?

Will do!!!Sorry but we had to use red have no yellow but ate some on some cornbread for dinner and it was so good!!!!!!!!!!
