Zucchini Bread
3 cups flour, sifted
1tsp baking powder
1 tabs cinnamon
1 isp salt
3 eggs , well beater
2 1/4 cups sugar
1 cup of vegetable oil
2 cups zucchini, graded
1/4 tsp vanilla
1 cup walnuts, chopped

Combine and mix dry ingredients, Combine eggs, vegetable oil , sugar,
zucchini, and vanilla. --mix well and add to dry ingredients slowly - blending in gently as you do . Fold in walnuts and pour into greased and floured loaf pans .Bake until tests done -about 1 hr. at 350 degrees.

Sweetie has 2 we like, one we make into muffins and the other has a lemon frosting. Just 1 cup powdered sugar and 2 Tbls fresh lemon juice whisked together and drizzled on top. We put the frosting on the muffins too....James
